You're listening to a miked amp out your near field monitors or out a FRFR system. You can use the models as preamps into the FX return of a tube amp. They have preamp only models. With these you select "no cabinet" and use the amp and your speaker cab.
If you're making a recording it is really nice to hear exactly how it is going to sound recorded, though.
The moving air feel will never be duplicated out a near field monitor since that is a factor that involves sheer volume. Run through a high powered FRFR speaker system like a QSC K series it is possible if you turn it up loud enough, but bear in mind that these units have tweeters which will produce hiss unless you add EQ to cut over 8 kHz -- slap a LP filter at 5500 Hz. Guitar speakers start a pretty steep rolloff there anyway.
Given the realities of modern gigging situations where there are noise ordinances makes cranking tube amps almost impossible, modeling makes sense.
